UKIYO, a 7,431-square-foot conveyor-belt sushi restaurant, will open in October at 818 Lincoln Road in Miami Beach. The second-floor space will pair Japan-sourced seafood with live performances in a dining room built around a custom kaiten belt.
New restaurant replaces a short-lived rooftop concept
NOAH Hospitality Group, founded by Philippe Kalifa, is behind the project. The restaurant replaces ORO, a luxury rooftop concept from Golden Era Hospitality Group that permanently closed after a brief run, according to Miami Curated.
Chef sources seafood directly from Japan
Executive chef Nono Shigetomi will lead the kitchen. Seafood arrives from fisheries across Japan, including Tokyo's Toyosu and Tsukiji markets, and the menu incorporates seasonal South Florida produce. Shigetomi told Modern Luxury that freshness is the kitchen's baseline, not its aspiration.
Custom belt anchors a theatrical dining concept
A custom conveyor belt will loop through the dining room, circulating handcrafted sushi while live performances unfold around diners. The concept takes its name from the Japanese word "ukiyo," meaning "floating world."
Menu blends classic and inventive Japanese dishes
Beyond the belt, the menu includes tableside kamameshi, robata skewers, house-made paitan ramen and a roving dumpling cart with a nightly rotating selection. The signature Ukiyo Roll combines tuna, salmon, hiramasa and Hokkaido scallop, topped with soy-glazed wagyu and umami crunch.
Design features stone, brass and lantern lighting
Casa Medina Design Studio designed the space. The interior features Rosso Lepanto stone, emerald-toned leather marble, aged brass and Japanese-inspired lantern lighting, with a water feature running through the room.
Owner says the goal is to be memorable
In a Sept. 2 Haute Living article announcing the project, Kalifa said the goal was "to build a restaurant people would continue talking about long after they left."
Restaurant joins a busy stretch of Lincoln Road
UKIYO joins a wave of new openings along Lincoln Road. The eight-block pedestrian district includes more than 200 shops and restaurants and draws over 10.8 million visitors a year, according to the Lincoln Road Business Improvement District. More than 70,000 square feet of new retail, dining and entertainment concepts are slated for the corridor in 2026.
Hours and opening timeline
UKIYO will serve dinner starting at 6 p.m. Hours run 6 p.m. to midnight Tuesday through Thursday and Sunday, and until 2 a.m. on Fridays and Saturdays. An exact October opening date has not been announced.
